Why did the Macross colony fleets (in M7 and MF) spend so much time in regular space and not more time folding to where ever they were headed?

I don't know for sure, I'm speculating.
Though the fact that perception of time passing is thrown off during fold according to the scene in Robotech's Macross Saga may indicate some kind of psychological effect. Not sure if that is in the Macross version fo the scene though. |

As I understand in MacF, the sheer mass of the colony craft makes folding inefficient and very power consuming. When they do so in Frontier, it is very
reluctantly and they abandon several of the pods to do so.
